Before the corn syrup pie, there were pecan cream pies. Historian Rebecca Sharpless found that "pecan pies did exist before 1900, but they were cream pies with nuts in them", and that the style lasted into the 1930s; one 1922 Texas recipe from Myrtle Mainer Neff, a Texas governor's wife, is a custard of milk, sugar, egg yolks and cornstarch with pecans, served with whipped cream (UNC Press blog, November 16, 2022:). Wikipedia notes a 1929 congressional club cookbook pie made with only eggs, milk, sugar and pecans, and says earlier pecan pies used darker sugar syrups or molasses. This recipe sits right in that family. It is the family recipe of King Arthur Baking employee-owner Liz Pearl, a pie with no corn syrup at all: packed brown sugar does the sweetening, a little milk and flour make it a smooth custard, and a spoonful of vinegar cuts the sweetness the way old chess pies (our Southern Lemon Chess Pie recipe) do.

🇬🇧 The original

The British original is the mince pie: a small, sealed pastry of dried fruit, suet and spice that once held real minced meat. See the British Mince Pies recipe.

📖 Origin story: Who Invented Pecan Pie? →

Why it works the kitchen science

Brown sugar instead of syrup

Packed brown sugar carries its own molasses, so the filling tastes of caramel without corn syrup, and the flour and milk turn it into a smooth custard instead of a gel.

Toast only the inside nuts

The diced pecans are toasted first for a slightly smoky, bitter edge that balances the sugar, while the halves on top toast in the oven (King Arthur).

Adapted from King Arthur Baking, "Old-Fashioned Pecan Pie" by Liz Pearl (updated November 5, 2025), one 9-inch pie. Amounts, the 375°F oven, the 47 to 50 minute bake and the barely-wobbling-center cue are King Arthur's. King Arthur calls for a prepared single crust and links its Classic Single Pie Crust, which we write out (see the crust baseline). The serving count of 8 and the 3-hour cooling time are ours.
