Country captain is chicken braised in a curried tomato sauce, traditionally garnished with almonds, coconut, parsley and currants, a dish America's Test Kitchen calls Southern. Wikipedia says it most likely comes from Anglo-Indian cooking in the British Raj, where "country" once meant things of Indian origin, and that a recipe appeared in Henrietta Hervey's "Anglo-Indian Cookery at Home" (1895). Molly O'Neill and Cecily Brownstone, as cited by Sam Sifton in The New York Times (2009, via Wikipedia), found the earliest American printed recipe in "Miss Leslie's New Cookery Book" (Philadelphia, 1857).

How it reached the South is DISPUTED. The most repeated story says a British sea captain in the spice trade brought it to Savannah; Wikipedia calls this a theory with weak sourcing, and Craig Claiborne suggested "captain" was a corruption of "capon". The 20th-century chapter is better documented by Wikipedia: Franklin D. Roosevelt ate it at his Little White House in Warm Springs, Georgia, reportedly introduced it to General George S. Patton, and the Army later put a country captain chicken into its Meal, Ready-to-Eat rations around 2000. It is America's oldest curry in this hub, centuries before takeout.

Why it works the kitchen science

Bacon fat twice

Browning the curry-rubbed chicken in bacon fat adds smoke to the sauce, and a little of the same fat toasts the topping, so you can pour off the rest and keep the sauce from turning greasy.

Skin above the sauce

Braising uncovered with the skin on top keeps it from going soggy while the meat underneath cooks to tender.

Step by step

  1. Step 1

Heat the oven to 325°F with a rack in the lower-middle position. Mix 4 tsp salt, 1 tsp curry powder and 1 tsp pepper. Pat the chicken dry and season it all over.

  2. Step 2

Cook the bacon in a Dutch oven over medium-high heat 7 to 9 minutes, until crisp, and lift it onto paper towels. Brown the chicken skin side down in the fat 10 to 14 minutes, until deeply browned, and move it to a plate. Pour the fat into a bowl, return 2 tbsp to the pot and save about 2 tbsp for the topping.

  3. Step 3

Pulse the onions, 1 cup of the bell pepper, the garlic and the ginger in a food processor until very finely chopped but not pureed, about 10 pulses. Cook in the pot over medium-high heat, scraping up the browned bits, 5 to 7 minutes.

  4. Step 4

Off the heat, add the tomatoes with their juice and the water and mash the tomatoes coarsely. Stir in the raisins, 1/2 tsp salt, 2 tsp curry powder, the remaining 1 tsp pepper, the remaining 1 cup bell pepper and the bacon. Bring to a simmer over medium-high heat, then nestle in the chicken skin side up, keeping the skin above the sauce.

  5. Step 5

Braise uncovered in the oven 40 to 45 minutes, until the thighs read at least 195°F (well past the 165°F safety line; dark meat gets tender up there). Rest 10 minutes.

  6. Step 6

Meanwhile, heat the saved fat in an 8-inch skillet over medium heat and toast the almonds and coconut 2 to 3 minutes, until golden. Off the heat, stir in the cumin seeds, coriander seeds, the last 1/4 tsp salt and the last 1 tsp curry powder.

  7. Step 7

Stir 2 tbsp cilantro into the sauce. Serve the chicken over rice with plenty of sauce, the almond topping and the remaining cilantro.
