Fat Tuesday Recipes: Pączki, Beignets, Malasadas and Pancake Day
The last day before Lent was the day to use up the butter, eggs and sugar, and much of Europe did it by frying. Poland makes pączki, Germany fills Berliners, Portuguese families in Hawaii made malasadas famous, and Britain calls it Pancake Day.
🍩 Fried for Fat Tuesday
Jam, custard and sugar, fried the old way.

Polish Pączki (Fat Thursday Doughnuts)
Extra-rich jelly doughnuts made with egg yolks, butter and vanilla, fried deep mahogany, tossed in powdered sugar and filled with plum, rose petal or raspberry jam for Fat Thursday.

German Berliner (Jam-Filled Krapfen)
Soft balls of butter-and-egg yeast dough fried with their pale "collar", rolled in sugar and piped full of jam: the German jelly doughnut, called Berliner, Pfannkuchen, Krapfen or Kreppel depending on where you buy it.

Portuguese Malasadas (and Hawaii's Malasada Day)
Hole-less yeast doughnuts made with bread flour, milk and eggs, patted into disks, fried golden and tossed in sugar while hot: the Portuguese Shrove Tuesday treat that became Hawaii's Malasada Day.

New Orleans Beignets
Squares of a very wet, eggy yeast dough fried until they balloon, then buried in powdered sugar, the French Quarter coffee-stand doughnut, made at home.

Tuscan Bomboloni alla Crema (Custard Doughnuts)
Big, cloud-soft Italian doughnuts made from a folded yeast dough, fried slow and pale gold, filled with lemon-and-vanilla pastry cream and dusted with powdered sugar, the way Tuscan bakeries and beach carts sell them.
🥞 Pancake Day
In Britain and Ireland, Shrove Tuesday is Pancake Day.

Swedish Pancakes (Pannkakor) with Lingonberry Jam and Cream
Thin, crisp-edged Swedish pancakes made from a simple milk, egg and flour batter, rolled or folded and served with lingonberry jam and whipped cream, Thursday-style.

The Dutch Baby (Seattle Oven Pancake)
A blender batter of eggs, milk and flour poured into a skillet of sizzling butter and baked at 425°F until it puffs up high around the edges, served the original way with lemon and powdered sugar.

American Buttermilk Pancakes (The Diner Stack)
Fluffy, tangy buttermilk pancakes leavened with baking powder and baking soda, rested so the batter thickens, griddled at 350°F and stacked high with butter and maple syrup.

Breton Buckwheat Galette Complète
A thin, lacy buckwheat crêpe from Brittany, filled in the pan with Swiss cheese, ham and an egg, then folded into a square around the yolk.
